大七酒造位於日本福島,於寶曆二年(1752年)創業,迄今已有兩百六十餘年歷史,以那「生酛釀造法」與酒造獨創的「超扁平精米技術」而揚名。當各家酒造都捨棄了傳統,投入了那較為省時省力的速釀酛作法時,大七卻自始至終維護著其一貫信念而不隨波逐流,最終以此奠定了生酛釀造之經典地位。
